“Days of our Lives” Suzanne Rogers [Maggie] briefly mentioned her famous lemon square bars, and fans flooded Soap Opera Digest to get the classic recipe. Rogers noted she didn’t remember where she got the recipe as it was a very long time ago. Suzanne said, “I have had it so long, I don’t remember where I found it. It may have been a magazine, but the paper is well over 28 years old. The sheet I have it on is a flimsy, yellow person of paper.”
Lemon Square Bars Recipe
Ingredients
1 3/4 cups flour (sifted)
3/4 cup powdered sugar (sifted)
1/2 pound salted, softened butter
Mix together and press into a 9×13 glass dish.
Bake at 350 degrees for 25 minutes. Check often after 18 minutes to ensure it doesn’t over bake.
As that bakes in the oven, mix:
4 eggs
4 tablespoons flour
6 tablespoons fresh lemon juice (Hint: Look for sweet lemons.)
2 cups sugar
1/2 teaspoon baking powder
Mix the ingredients together with a hand mixer.
Take out the crust that was cooking in the oven.
While crust is still hot, pour the mixture over the crust and bake an additional 25 minutes- again check after 18 minutes.
Remove from the oven and let it complete cool. Sprinkle the top with powdered sugar. Enjoy!
Suzanne Rogers later noted that this recipe could easily be customized for a gluten-free recipe by using almond or coconut flow in place of the white flour. Furthermore, she noted, you could use raw sugar or even coconut sugar to make it a healthier dish.
